I enjoy making pickles but I don't always enjoy doing the water-bath. It's an extra step that is hot and takes a while depending on how many jars you have. To avoid doing this all the time we sometimes make batches of refrigerator pickles.
Refrigerator pickles are crisp and tasty just like their regular pickle counterparts. The cool part is you don't have to waterbath them. They don't keep as long, usually just a month. If you eat them first and quickly this saves your regular pickles for the off-season when there are no fresh cucumbers.
This is one of my favorite recipes.
